What's not to love about classic chicken noodle soup?! This easy recipe is one of our favorites for so many reasons.

  • Cozy & Comforting – This soup is the ultimate comfort food. Big pieces of carrots, lots of egg noodles, veggies and yummy broth – it's delicious!
  • Made in one pot- This soup is made entirely in your crockpot which means super easy clean up!
  • Lean protein – I use boneless skinless chicken breasts in this recipe, which are lean and high in protein!
  • Veggie loaded– I load this soup up with a ton of zucchini, carrots, and onions. The more veggies the better in my opinion!

Ingredients for Crockpot Chicken Soup with Noodles

To make crockpot chicken soup with noodles you'll need:

  • celery, onion, carrots, garlic
  • boneless skinless chicken breasts
  • salt, pepper
  • fresh rosemary, dried thyme, red pepper flakes, bay leaves
  • chicken broth
  • egg noodles

How to Make Chicken Noodle Soup

Making crockpot chicken noodle soup is SO easy! Here's how to do it:

  1. In your crockpot combine all ingredients except for egg noodles. Cook on low for 6-8 hours or high for 3-4 hours.
  2. 20 minutes before you're ready to eat, remove your chicken, shred them using forks, and add the shredded chicken back to the pot.
  3. Turn your crockpot to high and add in your egg noodles. You can also boil them separately on the stove if you'd prefer.
  4. After 15-20 minutes your egg noodles should be perfectly cooked and your soup will be ready to enjoy!

SUBSTITUTIONS FOR CROCKPOT CHICKEN NOODLE SOUP

Rosemary – You can omit rosemary if you don't like it. If you don't have fresh rosemary you can sub with 1/2 teaspoon dried rosemary

Chicken– You can use boneless chicken thighs or tenders in this recipe if you prefer, but I like it better with chicken breasts.

Carrots– Feel free to add more or skip the carrots.

Cooked Chicken – You can use this instant pot shredded chicken, crockpot shredded chicken, or chicken from a rotisserie chicken. Cut the cook time in half if you're not using raw chicken.

Extra veggies –You could add chopped zucchini, kale, crushed tomatoes or spinach to this recipe too!

Broth – Broth is the same thing as stock and can be used interchangeably. Vegetable, chicken broth or beef broth will also work in this recipe

Best Type of Pasta: We have only tried this recipe with egg noodles. I wouldn't recommend substituting smaller pastas like pastina, but I think elbows, fusili, or rotini would all work. I haven't tried making this with gluten free pasta but I would worry that it could easily turn very mushy. I'd boil your gluten free noodles on the side instead of cooking it all in one pot.

Weight Watchers Note: The only points in this recipe come from the pasta on the blue plan. Every pasta has a different point value, so points may vary.

Raw Chicken vs Rotisserie Chicken in Crockpot Chicken Soup

You can make slow cooker chicken soup with raw chicken or rotisserie chicken. If you are using a cooked rotisserie chicken you can cut your cook time in half.

To make this slow cooker soup with a rotisserie chicken: pull off all of the meat from the bone, chop it and add it to your soup. Cut your cook time in half. Save the carcass and make bone broth!

There is no major difference between flavor of raw chicken or rotisserie chicken in this soup. Use whatever you have! The only difference is the cook time.

What Cut of Chicken to Use:

You can use boneless chicken thighs or tenders in this chicken noodle recipe if you prefer, but I like it better with chicken breasts. This soup also will work well with split chicken breasts.

Can I use frozen chicken breasts?

No you can't use frozen chicken breasts in this chicken noodle soup recipe. You should never put frozen chicken in a crockpot.

If chicken breasts aren't properly thawed before cooking you run the risk of a food safety issue. The chicken could cook on the outside and be completely raw on the inside.

Can I make this crock pot chicken soup recipe overnight?

You can make this crock pot chicken soup recipe overnight, but we don't recommend it. This soup only needs 3-4 hours on high or 6-8 hours on low. If you are going to make it overnight, wait until you are awake to add your noodles because they cook quickly

Can you make chicken soup with a rotisserie chicken?

Yes you can make this soup with rotisserie chicken! Simply take off all the meat from the chicken, chop it and add it to your soup. You can cut the cook time in half. Save your chicken carcass and make bone broth!

Can you put raw chicken in chicken soup?

Yes you can put raw chicken in chicken soup. As long as you are boiling the soup until the chicken is cooked thoroughly it is completely fine to add raw chicken to soup. The chicken should cook for about 15 minutes or until it reaches an internal temperature of 165.

How long can chicken soup stay in crockpot?

Chicken soup shouldn't stay in the crockpot past 8 hours. After 8 hours the chicken might start to get too tender and the veggies will start get mushy. If you add pasta to soup it should be removed from the heat after 10-15 minutes to avoid it getting overcooked.

Can you put uncooked noodles in chicken soup?

Yes you can put uncooked noodles in chicken soup. Add them at the very end when your chicken soup is finishing cooking. It should only take 10-15 minutes for the pasta to cook.

Do you boil noodles separately for soup?

You can boil noodles separately for soup. It's best for storing soup to boil the noodles separately so that they don't get overcooked/absorb the chicken broth.

Do you have to add water to chicken noodle soup?

You don't have to add water to chicken noodle soup, but you do need to add liquid of some sort. You can use water or chicken broth for more flavor

Storing Crockpot Chicken Noodle Soup:

If you plan to store/meal prep this recipe COOK YOUR NOODLES SEPARATELY. I know we all love a one pot meal, but the noodles will get soggy if left in the soup for extended periods of time.

How can I store my chicken and noodles crockpot recipe?

For storing: This soup keeps for up to 4 days in an airtight container in the refrigerator. The noodles will absorb some of the chicken broth. To avoid this, cook your noodles separately, or add more chicken broth to your soup.

Freezing this soup: This soup freezes very well! I do not recommend freezing or refrigerating it with the pasta as it will get mushy. Freeze in airtight containers and store for up to 3 months. When you're ready to eat, defrost the night before in the refrigerator. You can also heat in the microwave or on the stove directly from frozen.

Can slow cooker chicken noodle soup be frozen? For how long?

This soup freezes very well! If you plan to freeze it, I would recommend cooking your pasta separately.

Make Ahead Homemade Chicken Noodle Soup

If you want to make this chicken noodle soup ahead of time, I recommend cooking the noodles separately. The noodles will continue to cook after the soup is finished cooking and absorb the chicken broth.

Cook the soup completely, boil your pasta separately and then when you're ready to eat either stir the cooked noodles into the soup, or simply scoop into your bowl and top with soup as you serve

If you want to prep some of this chicken noodle soup ahead of time you can cut all the vegetables and chicken so you just need to cook it.

Can you make Instant Pot Chicken Noodle Soup?

This is a crockpot recipe, and we don't recommend making it in your instant pot. If you are going to use your instant pot we recommend cooking the soup and noodles separately.

You can cook the soup at 14 minutes, high pressure, sealing. Let the pressure naturally release for 5 minutes and quick release the remaining pressure. Once pressure is released remove the chicken, shred and add back to the pot.

Cook your noodles on the side and enjoy.

What can I add to my chicken soup to give it flavor?

I doubt you'll need it with this recipe, but if you tried another recipe and it turned out to be too bland, try adding these things to give it more flavor:

  • parmesan cheese rind: a parmesan cheese rind is an awesome way to add flavor to soups/stews. You can get them at most grocery stores in the cheese department. I store them in the freezer and add to soups like you would a bay leaf. Add as the soup cooks and then discard when ready to eat
  • fresh herbs: fresh herbs like basil, parsley or rosemary are all delicious in soup

  • 1 cup celery chopped finely
  • 1 cup onion chopped finely
  • 1.5 cups carrots sliced in small circles
  • 1/2 tablespoon garlic minced
  • 1.5 lbs boneless skinless chicken breasts
  • 1/2 teaspoon salt
